Cherry Chocolate Coconut Granola

Happy Monday everyone!  Let’s talk about breakfast.  In the past few years, I’ve made many changes in our kitchen, making more and more things the homemade way rather than purchasing pre-packaged items.  One of the hardest habits for me to kick was my cereal habit.  I grew up eating a bowl of cereal for breakfast pretty much every single day, and so I continued that pattern well into adulthood.  But, I was starting to get really sick of it.  Plus, the nutritional value was somewhat lacking.  (I realize there are healthy cereals out there, but I just couldn’t get on board with any of those.  I was more into things like Count Chocula.)  The change started with finding several varieties of oatmeal that I not only liked, but loved, and I realized I could be getting more out of my breakfast.  Even oatmeal gets old after a while, so I like to mix it up with some crave-worthy granola over yogurt.

Ben is particularly fond of granola and would often buy it from the store…but that just seemed wasteful because it’s so incredibly easy to make good granola at home.  Not to mention, store bought granola often appears healthy but a quick peek at the ingredient list or nutrition facts can reveal otherwise.  What better way to control all of that than to make your own?  One of his favorite flavors was a cherry-chocolate-coconut variety so I set out to create a homemade version.  I ended up including this in our holiday goodie packages this year and it was definitely well received.  This has become a staple in our home and the moment we run out, I whip up another batch.  I can happily say that I don’t even remember the last time I bought a box of cereal.  (I wish I could say the same for my family but for now, I’m just trying to lead by example.)

Directions

  • Preheat the oven to 325˚ F.  Line a baking sheet with parchment paper or a silicone baking mat.  Place a large skillet over medium heat.  Add the coconut to the pan in an even layer and cook, stirring frequently, until lightly browned and toasted.  Transfer to a bowl and wipe out the pan.  Return the pan to the heat and add the chopped walnuts and almonds.  Cook, stirring occasionally, until lightly browned, 3-4 minutes.  Stir in the oats and canola oil and continue to cook, stirring occasionally, until the oats are lightly toasted, about 3 minutes.

  • Transfer the oat mixture to a large bowl and stir in the honey, ground flaxseed, cinnamon, and salt.  Spread out onto the prepared baking sheet in an even layer.  Bake, stirring every few minutes, until the granola is light golden brown, about 15 minutes.

  • Stir in the toasted coconut and dried cherries.  Move the granola to one side of the baking sheet and press gently into a thick slab.  Let cool to room temperature.  Break the dried and cooled granola into small clusters, mix in the chopped chocolate, and store in an airtight container.

    Dried cherries are definitely yummier than raisins, I’d recommend them. I prefer to eat my granola over yogurt but Ben loves to eat it with milk like cereal. It’s just a personal preference thing.

    I know exactly what you mean! Boxed cereal from the store is a very rare treat for us, maybe a couple times a year and even then it’s treated more like dessert or a sweet snack than breakfast. I love making homemade granola and the cherry, chocolate and coconut sounds like an awesome combo!

    This looks delicious, and beautiful. I am going to try it this weekend (if I can wait that long!) Those chunks of chocolate combined with the dried cherries would make it a great hostess gift because it’s such a treat and so gorgeous to look at. I have given breakfast treats as a hostess gift for friends who have had us over for a big dinner party (such as scones and pancake mix). It’s nice not to have to think about breakfast the day after.     Ever since I started making my own granola, I haven’t gone back to boxed cereals. I started because I had completely cut processed foods out of my diet, except the cereal. I thought it was good for me, but I noticed I always got a stomach ache after breakfast. I read somewhere that the grain in cereals are super processed and actually really bad for your body. I figured the stomach aches were telling me something and I switched to granola. No more sick feeling! Now I feel full all the way until lunch without feeling heavy. It’s worked out really well. :)

    In my version I use coconut oil instead of canola oil. I love that coconut flavor!

    Thanks Annie! My son and I both love granola with yogurt, but the kinds we normally go for are so expensive. I’m trying to cut down on food costs without sacrificing health (or taste, obviously :) ) and this looks fantastic. Its more cost effective because I always have a lot of these ingredients onhand, purchased in bulk. I am slowing watching my pantry and fridge transform from plenty of boxes to lots of pretty glass containers full of yummy stuff. Loving it! Thanks again! I am excited for the yogurt recipe, too.     I love to make granola. I usually make a Maple Apple Walnut Granola. Chocolate and Coconut is one of my favorite flavor combinations, and I love the idea of incorporating that into granola…mmmmm

    I’ve also bought it from both my health food store and grocery store – just ask, they probably have it. I keep the ground flaxseed/flax meal in the freezer, but I also keep whole flax seeds (usually available in bulk at my regular grocery store and health food store) on hand, and if I feel like it I’ll grind my own in a small electric coffee mill (I do it this way when I add it to our oatmeal too). Fresh ground is always better, but I like to have the pre-ground stuff onhand too, for convenience… its still really good for you! I ran out of eggs (heaven forbid, I think it was a first!) recently and was able to mix a Tablespoon of flax meal with 1/4 cup of water, let it sit for 10 minutes, and use it as an egg replacer and it worked out great!

    Thank you so much!!!! I’ve only recently started making stuff at home on a regular basis so I’m really new at some of this stuff. But my kids LOVE cereal and I’ve been staring at endless lists of unhealthy ingredients for weeks trying to figure out how to make some yummy cereal at home. Perfect! I will be trying this within the next week for sure! Have u ever subbed the cherries for another type of dried fruit? Cranberries? Blueberries? (It seems like they would be interchangeable.)

For all of us that swear we will read a recipe thoroughly before beginning then get so excited to make said recipe that we don’t read the directions ahead of time…maybe just a small edit to say transfer oat mixture to a separate bowl or another bowl. Duh! I’m still excited even though I missed a small step. Hopefully my coconut won’t be too crispy! Thanks a ton for the inspiration. I’m 14 wks pregnant and seriously nauseous.     I’m not sure I understand where your confusion lies. The recipe does say to transfer the oats to a separate bowl. But then you talk about the coconut being to crispy, so maybe that is what you mean? It also says about the coconut, “Transfer to a bowl and wipe out the pan.” Maybe you can clarify what is confusing to you.

    I wish I wished for a million dollar!! just like you we are reducing the amount of packaged food and I must say that oatmeal does get old after a while and we love granola but I never dared to buy it because it was loaded in calories..making my own granola was on my mental to do list and there you are..my sweet sweet Annie…making a deliciously looking granola…thank you..you may not know it, but you do make a difference in people lives…you make me smile everytime I open your page. have a wonderful day Annie.

    I’m so excited about this recipe! I grabbed a couple of boxes of granola bars at the store recently because I like having them on hand right after I have a new baby. I was extremely surprised by how much I liked the chocolate & cherry combo so I was hoping to make some soon. I’ll make this instead since the hubs has recently started eating granola & yogurt for breakfast at work!

    That would likely significantly affect the consistency and flavor of the granola, since the wet:dry ratio is fairly important here. Maybe you could try a substitute?

    This is a must-try. I tried making granola before from a recipe my friend gave me but it never turns out like hers! I am definitely trying this one. Looks so good. I’m sure my 2 year old will love this as well. I’ve becoming more of a DIY-er because the taste is undescribably so much better (your hamburger buns changed me… Bagels are next to try!) and it’s almost always healthier.

    I made a half batch of this today and it is delish! I only had quick oats, but it still came out pretty well (a little flakier I suspect than it’s supposed to be). I also messed up by not reading the directions all the way through . . . so really, I didn’t follow your recipe that well :) but it still came out yummy! Thanks for always posting great ideas!

    Yes, that’s what I did…added the oat mixture into the coconut bowl. I thought maybe the coconut would get too crispy in the baking process. The end result tasted a tiny bit burnt to me but everyone else that tried it didn’t notice. And, it’s still yummy!

    Just wanted you to know that this granola is rocking my world right now! I made it with just a few changes based upon the ingredients available in my pantry, and, HOLY MOLY, I skipped dinner and just ate this. My 17 month old did, too! I only had 1 cup of rolled oats, so used 4 cups of quick oats and 1 cup of steel cut oats. I subbed pecans for the walnuts. I also threw in some pepitas. And I used a mix of dried cherries, blueberries, raspberries and golden raisins. And, I didn’t have any bittersweet chocolate, so I just used some semisweet chips. But, oh so good! I can’t wait to make it with all the correct ingredients. Keep up the good work, Annie!

    Soi just ,add this and it is super yummy. My only question is mine didn’t come out “crunchy” or didn’t really chuck when I broke it apart…what could have gone wrong ( I followed the recipe exactly) maybe I needed to cook it longer? Thanks off all your awesome recipes!!!!

    Yes, it sounds like it just needs to bake a bit longer next time. I have also heard that mixing in an egg white can help it clump up more, though I have not tried that technique myself.

    I have been thinking about this granola since you posted the recipe and today I finally had time to make it. It came out so good! My kids think its a treat so I don’t think I’ll have any trouble switching their usual Cheerios out for this in the morning. It made plenty so I’m going to bring some in individual baggies to work on Friday to share with my coworkers. I love sharing the fruits of your recipes with my peeps at work! They all think I’m some kind of culinary genius or something.

    Just have to share a funny story. Have made this before and it is excellent, everyone who tried it raved about it. This last time I made it, got in a hurry in the end when adding the coconut, nuts, flaxseed and spices, I also added the chocolate. Woops! Well just didn’t stir it as much and I have more of a chocolate coated granola, but still yummy.
