I don't think a mixer would work for making cookie crumbs but you should be able to get the same effect by simply putting the cookies in a plastic bag and crushing them in whatever way you prefer.

I am making these tonight! But quick question... Would I be able to substitute parchment paper for the aluminum foil in the pan?

First off let me say that your blog is amazing. I stumbled upon it looking for an "Oreo cookie cheesecake" recipe for my brother who requested the dessert for his 32nd birthday. I looked at a few recipes but once I saw your recipe (and the incredible picture), I knew that I'd found a winner. I just took them out of the oven and since I forgot the "Cooking with glass" rule and didn't adjust the oven temperature, they came out a little brown on the top but that's ok. I'm just gonna cover the top with an "Oreo cookie whipped cream" and Oreo cookie halves. I know that he's gonna enjoy this cheesecake. Thank you for this blog Annie...You have a fan for life!
