A cold rainy night in Virginia, and I finally had an excuse to try this -- definitely a keeper! I used a fully cooked andouille chicken sausage, and it worked just fine. Although I was expecting to have to add a little extra fat to brown it, it turns out it didnt need it. I think the only tweak I might make for next time is to sprinkle a little salt on the shrimp ahead of time; I felt like they could've used a bit more seasoning. Thanks for a winner!

I can't WAIT to make this! I have a few friends who are from LA and won't give up their gumbo & jambalaya recipes (which are FANTASTIC!) so I hope this one is just as good!

I'm curious though, how much does this serve?

You've been giving that new cookbook a great workout, girl. Looks fab! I think I may have to go on the hunt for some andouille this weekend.

Kelly,
I buy frozen uncooked shrimp at the grocery store. After all, I live in Indiana - fresh shrimp are not abundant here. I think they taste great - just be sure to buy uncooked rather than precooked.
