		<description>I made this the other night and really enjoyed it. Only change I made was to make my own tortilla chips out of leftover corn tortilla wraps. I also did not have an oven safe skillet large enough for the meal, do I just transferred everything into a casserole dish and baked in the oven. Thanks for the great recipe. Really enjoying your blog!</description>

Love the smoky flavor and the bit of spice created by leaving the seeds in the chipotle peppers in adobo sauce.  I can already tell that this will be a frequently requested meal in our home.</description>
