These are simple beautiful! I'd love to know how you got the frosting to look like that type of piping and what not. Your presentation is amazing!

Hi K,
Is it this specific marshmallow frosting recipe you have tried unsuccessfully, or a different version? If it was not this, obviously I think you should try this one because it always works for me.

If it is this recipe causing you trouble, I'm not sure what to tell you. There are a couple things that could be causing you issues: 1 - any streak of fat in your mixer bowl could prevent the egg whites from properly peaking or 2 - you need to beat them longer. I've also heard that humidity can affect this, though I haven't experienced that myself. I've never had any trouble getting my marshmallow frosting to peak and in fact, I think it holds shape as well as any buttercream. I'm not sure what else to tell you but hopefully that helps a little bit. Enjoy!

Any time a recipe simply states sugar, you can assume it means granulated. If it calls for powdered sugar, that will be indicated. Enjoy!

I don't think this frosting is ideal for decorating to look like something other than torched marshmallow. I would probably just use a vanilla buttercream that holds up better.

This cupcakes look amazing, but I have a quick question. I'm going to a cupcake party and wanted to decorate them like the grinch. In reference to the frosting would it hold up if I added green dye to it? And do I have to torch it, or will it be fine if I just let it dry?

Wow!!! I made these cupcakes for a Halloween party and put little ghost toothpicks on top of the topping. They were adorable and everybody was asking for the recipe. I will definitely be making these again. BTW, I don't have a torch, so I just put them under the broiler for a bit.

Just made these today, turned out great! I did use my oven to brown the tops of the icing and they came out perfect, so it can be done!!
