I don't know any better than you how long it officially lasts (see the FAQ page) but I think it lasts a pretty long time. I am actually getting ready to do another post on it pretty soon because I now have a different recipe I prefer to this one. You can use any frosting you like underneath it. Have fun! Yes, you always have to frost a cake with some sort of frosting before using fondant, otherwise it has nothing to stick to. Is it difficult? Not to me, but some may beg to differ.
