This looks amazing! I'm going to give it a shot on Saturday. I've made many cheesecakes before, but this one looks like it may take the cake! I'm just hoping it comes out as beautiful as yours, and that it doesn't crack. (I'm a little worried about some of the above comments that reported cracking after checking the internal temperature with a thermometer.)

This was my first attempt at cheesecake. My boyfriend requested it for my birthday. It turned out pretty well, A+ for taste. It was running in the middle (just probably in a 1 inch circumference.) I didn't use a thermometer so I think either it didn't cook all the way or I should have let it sit longer (we could only wait 2 hours after it had finished cooking). Anyway, I would definitely try this recipe again! Thanks!

This was the first time I'd ever made a cheesecake! Thank you so much for the recipe! My boyfriend ate nearly half the cake in one sitting! I also had a huge crack which I think was from when I tested the temperature ... but ohh, well! Tasted amazing!

I made this for my Mom's birthday this weekend and it was delicious! I've never made a cheesecake before but I attempted it for Mom! It looked beautiful when I took it out to test the temp, but a huge crack formed where I had put in the thermometer. Oh well, it still tasted great!

I stumbled upon your blog while looking for some cupcake recipes....LOVED everything I saw and the most wonderful thing about you and your blog---you REALLY do seem to care about your fans by responding to their questions, because of this I plan to become a fan. Like many I sometimes have questions for the chef or regarding the recipes and really would like to hear directly from the source because it just seems to be the best way. Please do keep up what you are doing.

I was nervous about tackling this as my first cheesecake, but it turned out great and was a huge hit at my house! We will definitely be making it again(and maybe attempting a brownie or chocolate graham cracker crust)! Thanks for the delicious recipe :)

I made this cheesecake in a kaiser brand springform pan (which is sort of a dark gray color) and the sides and the bottom burned. I was wondering what kind of springform pan you used for your cheesecake. Also, as soon as I put the thermometer in the center of the cake, 2 deep cracks formed. My guess is because the cake was overbaked - but I followed directions exactly and checked oven temp. with an oven thermometer.
