LOVED this recipe! Found it by accident (searching for cupcake icing) and it made a wonderful activity for my 4 year old. He was able to do a fair amount of it, which makes it perfect for us. I was looking for a recipe where he could really participate, and this hit the spot. They weren't quite as pretty as yours, but amazingly non-messy for a little kid doing the lion's share of the work.

Hi Michele,
I don't know what size tip I used and I honestly don't think it matters since you are only using it to fill the cookies, but the frosting will be covered up and pushed to the edges anyway.

These are so cute! We're having a bake sale to raise money for our Church this weekend and I'm definitely making these to appeal to the kids. What size tip did you use for the frosting?

I saw your post and decided to turn them into a St. Paddy's Day snack for my daughter's class. They turned out really cute and I blogged about them with a link to your post.

Thanks!
Michelle

These were fabulous! My fourteen year old daughter took some to school to share with friends at lunch and they keep asking for more. Kids of all ages love these. I got a mechanical pastry bag from Williams Sonoma for Christmas and am soooo enjoying it! It is a perfect tool for these. I also used it on your cinnamon cupcakes.

[...] Jarod’s glorified Oreo cookie Saturday is Jarod’s 3rd birthday and tomorrow in his preschool class they are having a Valentines and a birthday party celebration. I wouldn’t say Jarod is a finicky eater but he definitely has his preferences. One of his favorite treats are Oreo cookies. So instead of being a schlep of a Mother and buying pre-made cookies I thought I would make a glorified Oreo cookie for his celebration. Now this school is usually strict and does not like you to bring in cupcakes (because of the high sugar content in the frosting ) but instead lets you bring in cookies, ice cream, donuts ect… This absolutely does not make any sense to me . All of those other alternatives has just the same amount of sugar in them. I can understand food allergies but this is ridiculous. But since I am a rebel and a paying parent, I am bringing in these delectable little treats. I hope I don’t receive any phone calls from his school I found this recipe on the blog Tastespotting. They were so easy to make and I don’t know if I would consider them fully homemade because the recipe called for a boxed cake mix for the batter. I know one little boy will surely enjoy his glorified Oreo cookie though. Happy 3rd birthday big boy. I surely love you stinky butt! Here’s the recipe I used. http://annieseats.wordpress.com/2009/01/27/chocolate-cake-cookie-sandwiches/ [...]
